Service and delivery charges

Hello there,
we have a POS and in some deliverect order there will be:
- serviceCharge
- deliveryCost
- bagFee
- tip
- driverTip
So should we include these values as well in our POS cart screen? and if the order not paid should we collect these charges as well from the customer?
